Coleen’s Spice Cake

Coleen's Spice Cake

My kids and I wanted to make a special dessert for our friends who were coming for dinner. I instantly thought of the cake my mother-in-law, Coleen, recently made for us. It was moist and delicious as well as sweet, spicy, and a bit crunchy. The flavors combined beautifully together and the cream cheese frosting topped it perfectly. It is one of the easiest cakes I have ever made and my kids and I had so much fun baking together. I tweaked it a bit by using some brown sugar (instead of all white) and a bit of vanilla. Thanks for the wonderful recipe, Coleen!

Coleen’s Spice Cake:

Cake:

  • 2 cups of flour
  • 1 cup of white sugar
  • 1 cup of brown sugar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp vanilla
  • 20 oz can of crushed pineapple, plus juice
  • 1 cup chopped walnuts

How to Make Coleen’s Spice Cake

Preheat the oven to 350 degrees. Grease a 9×13-inch baking dish with cooking spray or butter.

Combine all ingredients, including pineapple juice, and mix thoroughly. Pour into the prepared baking dish.

Bake for 30-35 minutes. Let cool completely.

Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1 cube of butter, softened
  • 1 tsp vanilla
  • 2 cups of powdered sugar

Combine all ingredients together and beat with a mixer until smooth and creamy. Ice the cake when completely cooled.

Garnish the top with a sprinkle of nutmeg for a bit more spice. Enjoy.

Do you think it would work without the cinnamon, as I can’t abide the stuff? I don’t even like the smell of it.

  4. Jan, I don’t know how good it would be (because I love the cinnamon in this cake) but maybe you could use a dash of clove in it’s place. Let me know if it works.

  9. What do you mean “a cube of butter?” Does that mean all 4 sticks-a whole pound? or just one stick? This looks Delish! Can’t wait to make it!! Thanks!

  10. This looks amazing–can’t wait to try. Does the cake need to be refrigerated once done or can it remain out for a couple of days?

    1. Sharon,

I’ve never worked with mincemeat so I’m not sure how it would turn out. Let me know how it goes if you give it a try.
