Crispy Crackling Cookies

My son gave me a pretty little package he made at preschool for Valentine’s Day. It was a cookie starter kit that his teacher helped him make for crispy crackling cookies. I forgot all about the starter kit until I found it in my pantry the other day. These cookies were very easy to make and tasted fantastic. They were chewy on the inside and crispy on the outside–they tasted perfect dipped in ice-cold milk. My son and I had a great time making these cookies and an even better time eating them. Crispy Crackling Cookies:

Ingredients:

  • 1/2 cup of butter, softened
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup of white sugar
  • 1/2 cup of packed brown sugar
  • 1 cup of flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup of quick-cooking oats
  • 1 1/4 cups crisped rice cereal

How to Make Crispy Crackling Cookies

Preheat the oven to 350 degrees. Coat a baking sheet with cooking spray.

Beat the butter, egg, vanilla, and sugars with a hand mixer until creamy.

In a separate bowl combine the flour, baking soda, baking powder, and salt until well mixed. Slowly add the flour mixture to the butter mixture.

Add the oats and rice cereal and mix thoroughly. Drop by the spoonful on the prepared baking sheet.

Bake for 8-10 minutes or until cookies are light brown. Let cool on a wire rack. Enjoy.

  2. These taste delicious! Any ideas on why my dough was extra crumbly? I ended up not being able to bake all of them because they wouldn’t form into any sort of cookie shape.

      I’ve never had that happen so I am not sure. It may be that your egg was too small so there wasn’t enough liquid?
