Roasted Grape Tomatoes with Fresh Basil and Balsamic Vinegar

Roasted Grape Tomatoes with Fresh Basil and Balsamic VinegarThis is one of our family’s very favorite side dishes. It goes with any protein and is incredibly easy to make. Roasting tomatoes makes them extra sweet and juicy. I simply roast them with a bit of olive oil, sea salt, and fresh cracked pepper for 7-9 minutes. I then drizzle very good balsamic vinegar and fresh basil ribbons on top. It’s really healthy and delicious. My entire family loves these tomatoes – especially my son.

Ingredients:

  • 2 cups of grape tomatoes, cleaned
  • 1-2 tsp olive oil
  • Sea salt and fresh cracked pepper to taste
