Bacon and Cream Cheese Stuffed Jalapenos
I found this recipe on The Pioneer Woman’swebsite last year and have been waiting for an excuse to make them. We were having friends over for an appetizer party and knew these would be a big hit with the guys. They were super easy to make and really, really, REALLY delicious. I decided to use lean, par-cooked bacon to make them a little less fattening. They were a big success – everyone loved them.

Bacon and Cream Cheese Stuffed Jalapenos:

Ingredients:

  • Fresh Jalapenos
  • Cream cheese, softened
  • Lean bacon, sliced into thirds (par-cooked or raw)

How to Make Bacon and Cream Cheese Stuffed Jalapenos

Preheat the oven to 375 degrees.
Cut jalapenos in half, lengthwise. Carefully remove seeds and veins with a spoon. Smear each half with cream cheese then wrap with a piece of cut bacon. Secure by sticking a toothpick through the middle.

Bacon and Cream Cheese Stuffed JalapenosBake on a pan with a rack for 20-25 minutes. If the bacon doesn’t look brown enough after 20-25 minutes then turn on the broiler and finish cooking. These are best when the jalapeno still has a bit of bite to it and is not too soft. Serve immediately. Enjoy.

  1. I made these over the weekend as well! I'd seen them on the site but I made the version from her cookbook with chives cut in with the cream cheese and a kiss of BBQ sauce on top. Big hit. Huge.

  2. I've been making these for years!!! PW does it right. I've got a little rack in the shape of Texas for the grill. If you par boil the peppers it takes some heat off. Cousin Jack

  3. Oh yes I remember seeing these too, pretty sure I saved the recipe to remember to make it one day but somehow haven't gotten around to it yet. These look really very moreish!

  4. Yum, I love to stuff jalapenos! Great idea to layer them with bacon!
    I quickly blanch my jalapeno halves in boiling water with some vinegar in it. It softens them a tad and adds a subtle pickle-y flavour to them.

  6. Pam… What a wonderful appetizer! I love the way you have mellowed the heat of the jalapenos with the sweet tangy taste of the cream cheese and the smokeiness of the bacon. Brilliant!

  7. Yummmm I love these things! I like to mix the cream cheese with some chihuahua cheese or cheddar cheese and a little garlic and herb seasoning blend. PW's new cookbook tells you to mix the cream cheese with some cheddar and green onions then put a bit of BBQ sauce on the bacon too…that's going to be my next version! If you haven't picked up her cookbook yet, I highly reccommend

  8. i've seen peppers stuffed with any number of things, but this is one of the finest combinations i've seen. ya know what'd put it over the top? frying the suckers. 🙂

  10. Yeppers, I'm with ya. I made these a couple of times this year. So good!!!!! One time though I must have gotten some really hot peppers because it was over the top hot. Yours look wonderful!

  11. The kids and I just this year realized we liked brie. I topped ours with caramel and pecans though I used ritz cracker. The filo cups I'm certain are much yummier!

  12. You want to make them even better? Do them in a smoker. They are the most amazing thing ever. BBQ'rs do these as a snack during the long 12 hour cooks.

    Everyone in the BBQ world calls them ABT's. If you're curious as to what that stands for, email me or google it.

  14. I would chop up the bacon and blend it in with the cream cheese, then wrap in a crescent roll for a popper effect 🙂

  15. My wife and I have been making these for years, but we add gorganzola, to the cream cheese. They are my favorite game day treat.
