Oatmeal, Chocolate Chip, Craisin and Pecan Cookies

Oatmeal, Chocolate Chip, Craisin and Pecan Cookies

My husband and I were going out to a movie and dinner with friends. I wanted to bring a special treat to my girlfriend’s mother who was babysitting all of our kids. I decided to make some tasty oatmeal cookies with dark chocolate, craisins, and pecans (inspired by Bethie). The dark chocolate tasted so good with the tart craisins and I loved the crunchy pecans. I decided to use whole wheat flour to make them a bit healthier. They were a huge hit with everyone and they were so easy to make…I love that.

Oatmeal, Chocolate Chip, Craisin, and Pecan Cookies:

Ingredients:

  • 1 stick of butter, softened
  • 1/4 cup white sugar
  • 1/2 cup of brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup PLUS 2 tbsp of whole wheat flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 1/2 cups of quick-cooking oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup of craisins
  • 1/4 cup pecans, chopped

Preheat the oven to 325 degrees.

In a mixer, combine the butter, white sugar, and brown sugar until creamy. Mixing slowly, add the egg and the vanilla.

In a separate bowl combine the flour, salt, and baking soda; slowly stir the flour mixture into the creamed mixture until blended. Add the oats, chocolate chips, craisins and pecans then mix thoroughly.
