Roasted Garlic Flaky Biscuits

Roasted Garlic Flaky Biscuits

I was making a big pot of soup for dinner so I decided to whip up a batch of biscuits to serve with the soup.  I have a great recipe for flaky biscuits but I decided to add roasted garlic to make them extra special. I also topped each biscuit with sea salt and freshly cracked pepper before they baked. These roasted garlic flaky Biscuits turned out so fluffy and flavorful–they were especially good slathered in butter.  We all, kids included, loved these biscuits.

How to Make Roasted Garlic Flaky Biscuits

Prepare the roasted garlic.

Preheat the oven to 400 degrees. Line a baking sheet with a silpat mat.

Combine the flour, baking powder, and salt together in a bowl. Cut in the butter with a pastry blender or two knives until the mixture resembles a coarse meal. Place into the refrigerator for 10 minutes to chill.

In a smaller bowl, combine the buttermilk and sugar then whisk until well blended. Add the buttermilk mixture and the roasted garlic cloves (removed from their skins) to the flour mixture and mix with your fingers until combined.

Place the dough on a well-floured surface and knead 4-5 times. Using a rolling pin, roll the dough into a 9 x 5-inch rectangle. Dust the top with flour then fold the dough crosswise into thirds (like folding a letter to fit into an envelope).

Re-roll the dough into a 9 x 5 rectangle, dust the top with flour, and fold the dough crosswise into thirds again. Gently roll or pat the dough into a 3/4 inch thickness and cut with a biscuit cutter to form biscuits. Place dough rounds 1 inch apart on the baking sheet.  Season each biscuit with sea salt and freshly cracked pepper, to taste.

  1. There is nothing like home-made biscuits or bread with a bowl of warm, hearty soup! These look especially delicious with the addtion of roasted garlic and black pepper, Pam!

  2. You are killing me here. I love biscuits and yours look absolutely perfect – tall, lightly browned, and naturally split – and with the addition of garlic, my mouth is watering. Did I say, you’re killing me here?

  3. Looks so good! I bet they would have gone great as a side to my mushroom chowdah or tomato soup! I’m going to stick this on my fridge tonight and figure out the best meal to pair it with 🙂

  4. You know, I’ve never made biscuits before. I don’t know why. I’m always a bit intimidated by yeast but biscuits aren’t even made with yeast!

I’ll try this and let you know how they turn out. Thanks for sharing this recipe!

  5. Yum, Pam!
Those garlicky biscuits look divine & tasted fabulous, my husband agreed on that & were also great in combo with your wondeful comfort soup! It was a grand meal! Thanks again! 😉

  6. I almost always have roasted garlic on hand so I particularly like this one. I like the almost smoky flavor that the roasted garlic contributes in dishes like this, mashed potatoes and soups.
