Herbed Couscous Pilaf

I adapted this herbed couscous pilaf recipe that I found in the October 2010 issue of Cooking Light which was healthy, flavorful, and delicious.  This recipe is extremely quick and simple to make – which is perfect for a busy weeknight.  I served this couscous with chicken and roasted veggies for a delicious and healthy meal.  We all, kids included, loved this couscous pilaf.

How to Make Herbed Couscous Pilaf

Heat the garlic olive oil in a small saucepan over medium heat.  Add the minced shallot and cook, stirring constantly, for 1-2 minutes.  Add the couscous and cook stirring often for 2 minutes.  Add the chicken broth, sea salt, and freshly cracked pepper, to taste; bring to a boil. Cover, remove from heat, and let stand for 5 minutes.

Add the fresh parsley and chives then fluff with a fork.  Taste and add more seasonings if needed.  Serve immediately.  Enjoy.

  • 1 tsp garlic olive oil

  • ½ cup of whole wheat couscous
  • ½ cup + 1 tbsp chicken broth
  • Sea salt and freshly cracked pepper to taste
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped

Instructions

  • Heat the garlic olive oil in a small saucepan over medium heat. Add the minced shallot and cook, stirring constantly, for 1-2 minutes.
  • Add the couscous and cook stirring often for 2 minutes. Add the chicken broth, sea salt, and freshly cracked pepper, to taste; bring to a boil.
  • Cover, remove from heat and let stand for 5 minutes.

  2. Couscous is so quick and delicious, and I don’t know why I don’t make it more often! This looks so good, Pam. I love that you used whole wheat couscous. I need to make a trip to TJ’s to purchase some to make this recipe!

  3. I love how fast couscous comes together! Perfect side dish, or I have tossed in leftover bits of chicken for a main dish. A light lemon and olive oil dressing, and it is the perfect summertime meal!

  5. Can I substitute Quinoa? I bought quinoa at B.J.’s and I need to figure what dishes it can be added to?

    1. I always replace couscous with quinoa!!!
      Cup for cup Quinoa takes Longer to cook (15-20 mins) so just allow for that.
      Also remember to rinse your quinoa thoroughly or else there will be a bitter taste!
