Banana and Blueberry Pancakes with Cinnamon Vanilla Butter

My son woke up one morning this week and asked if I would please make him pancakes for breakfast.  How could I say no to my sweet boy? I went online in search of some tasty pancakes. Thankfully, I found these beauties over at The Comfort of Cooking that looked irresistible.  I was happy to find a recipe that used up the three bananas that were overripe on my counter and the fresh blueberries that needed to be used up.  The pancakes were a huge hit with both of my kids–they gobbled them right up with smiles on their faces.  Thanks for the recipe Georgia and for making breakfast a little more special this week for my kids.

How to Make Banana and Blueberry Pancakes with Cinnamon Vanilla Butter

Combine the butter, cinnamon, and vanilla together in a small dish;  mix until well combined.  Set aside.

Mix the flour, baking powder, and salt together in a bowl until well combined.  In another bowl, mix the mashed banana, egg, milk, vanilla, and sugar together until very well combined.  Gently add the flour mixture to the banana mixture and stir until just combined.  Pour in half of the blueberries and mix.

Pour about 1/4 cup of batter per pancake onto a hot nonstick griddle or skillet that has been coated with cooking spray or butter. Cook 2 minutes or until the tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 2 more minutes or until bottoms are lightly browned. Top with fresh blueberries, a dollop of cinnamon vanilla butter, and a drizzle of maple syrup.  Enjoy.

Ingredients

Cinnamon Vanilla Butter:

  • 2 tbsp softened butter
  • ¼ tsp cinnamon
  • tsp vanilla extract

Banana and Blueberry Pancakes:

  • 1 ½ cups of flour
  • 2 tsp baking powder

  • 3 bananas mashed well
  • 1 egg slightly beaten
  • 1 ¼ cups of milk
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 1 ½ cups of fresh blueberries divided

  5. I know the power of a good breakfast, but darn it! I am not a morning person, so making those gorgeous hotcakes would be a huge effort on my part! Don’t suppose you’d consider coming to my house and making that mouthwatering breakfast for me one sunny Sunday morning …?

  6. Jack Johnson’s song about “makin’ banana pancakes” is a household fave – but this is the first time I’ve done it. Substituted in 1/2 c. whole wheat flour, added about a tbsp canola oil and a couple tsp. brown sugar to the batter. Yummmmm…. thanks!

  8. these were great! I’ve made them a couple of times, with and without blueberries. I love them either way, but highly recommend the ones with blueberries. I ate the with a little bit of margarine and thought they were great. Also, I’m on weight watchers now, and using the recipe builder app I lightened up the recipe (swapped in 0 fat milk) and each pancake (the recipe yields 17 pancakes) was worth 2 pts. Totally worth it!
