My daughter has had a couple of tough days at school this week so I wanted to make her a special treat to cheer her up.  After looking through my cupboards, freezer, and fridge, I came up with a strawberry & chocolate shortcake parfait.  I made some homemade vanilla bean whipped cream, thawed some frozen pound cake slices from the freezer, sliced up some fresh strawberries, and grabbed some chocolate syrup and white chocolate chips.  I layered the ingredients in mini trifle dishes and served them for dessert.  Both of my kids really loved these desserts and I have a feeling it made my daughter’s tough week a little bit better.  This was such a fun and simple treat to make and I am certain I will be making these parfaits again in the near future.

How to Make a Strawberry & Chocolate Shortcake Parfait

Pour the whipping cream into a bowl, and add powdered sugar until the cream is at your desired degree of sweetness (I used 2 tablespoons). Gently remove the seeds from the vanilla pod and place them into the whipping cream. Using a beater, mix on high until the whipping cream is thick and fluffy.

Place some of the diced pound cake into the bottom of the dish followed by a few spoonfuls of sliced strawberries.  Drizzle the berries with a little chocolate sauce and a sprinkling of white chocolate chips followed by a few spoonfuls of whipped cream. Repeat the process with pound cake, strawberries, chocolate sauce, and white chocolate chips.  Top with a dollop of whipped cream and serve immediately.  Enjoy!

  • Using a hand mixer, mix on high until the whipping cream is thick and fluffy.

  3. What kid or adult wouldn’t love one of these! Today is my kid’s last day of school for the year and I can’t wait to just be with them for the summer and reconnect. It will be nice for my daughter to get a break from the “friend” drama that happens at school. I remember 6th-7th grade being so dramatic and socially awkward. Its tough when you see your child struggling with girl drama. It’s nice to know that when our kids have a bad day they can come home and we are there for them to wipe away the tears, listen to them and talk them through it.
