Words cannot describe how much I loved this salad.  The cherries, nectarines, and pomegranate seeds gave it such a lovely sweet flavor while the feta gave it a salty flavor and the white balsamic vinaigrette tied it all together beautifully.  I served this salad with the Shrimp Scampi and we gobbled it right up.  I’ll admit it… I went back for seconds of this salad.  Give this salad a try if you want a nice and light salad that is full of great flavors and textures.

How to Make a Mixed Greens with Rainier Cherries, Nectarine, Feta Cheese, and a White Balsamic Vinaigrette

Combine the olive oil, canola oil, white balsamic vinaigrette, sugar, sea salt, and freshly cracked pepper, to taste together in a small bowl. Whisk until well combined.  Set aside.

Combine the mixed greens with sliced cherries, nectarines, pomegranate seeds, and feta cheese.  Drizzle it with the balsamic vinaigrette and toss until well combined.  Serve immediately.  Enjoy.

Side Note:  You may have some vinaigrette leftover.  Seal with a lid and place into the refrigerator.

Ingredients

White Balsamic Vinaigrette:

  • 2 tbsp canola oil
  • 1 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • ½ tsp of sugar
  • Sea salt and freshly cracked pepper to taste

Salad:

  • 4 cups of mixed greens
  • Several Rainier cherries sliced (pits & stems removed)
  • 1 ripe nectarine sliced
  • 2 tbsp pomegranate seeds
  • 2 tbsp feta cheese

Instructions

  • Make the vinaigrette, by combining the olive oil, canola oil, white balsamic vinaigrette, sugar, sea salt, and freshly cracked pepper, to taste together in a small bowl. Whisk until well combined. Set aside.
  • Make the salad by combining the mixed greens with sliced cherries, nectarines, pomegranate seeds, and feta cheese. Drizzle it with the balsamic vinaigrette and toss until well combined. Serve immediately. Enjoy.

  1. Hi Pam, what a colorful and appetizing salad! I love your feta addition, in Greece feta is commonly served with watermelon or cantaloupe as a light meal on hot summer days…Have a great week!

  2. Cherries, nectarines and pomegranate sound good in a salad.. I think that I would have them with chicken.. (can’t do anything, I love chicken :))

  3. Ranier cherries are my FAVORITE! But they never last long enough around here to do anything with besides eat them plain. Your salad sounds tasty!
