Balsamic Dijon Vinaigrette

Hi! It feels like it has been such a long time since I last posted a recipe. I have had a hard time resting my back and not doing the things I love, such as taking pictures of my food and making new recipes. I decided to give it a try this weekend by making something super quick and simple. I made a lovely salad and wanted a sweet yet tangy vinaigrette to go with it. I threw some ingredients together and I loved how this vinaigrette turned out. It was sweet and tangy and it paired perfectly with the salad I served it with (the salad will post tomorrow).

Unfortunately, working with my lighting equipment and leaning forward to get good angles of the food was causing me a lot of pain – so much so that I had to have my husband finish shooting some of the photos. I am so sick of being in pain and I am frustrated that the healing process is moving so slowly.  I don’t know when I will be back to full-time posting but I hope it’s soon. How to Make a Balsamic Dijon Vinaigrette

Combine the oil, balsamic vinegar, red wine vinegar, Dijon mustard, minced garlic, honey, sugar, sea salt, and freshly cracked pepper, to taste together in a small glass jar. Whisk until well combined. Cover and set aside for at least 30 minutes prior to serving it with a salad so the flavors have time to mingle.

Side Note: My balsamic vinegar is very sweet so I used just a touch of honey and sugar. If your balsamic isn’t as sweet, you may want to add a touch more sweetness to your vinaigrette.

  • ¼ cup of canola oil
  • 1 ½ - 2 tbsp of balsamic vinegar
  • ½ tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1-2 cloves of garlic minced
  • ¼ tsp honey
  • ¼ tsp sugar
  • Sea salt and freshly cracked pepper to taste

Instructions

  1. So sorry you’re still in pain! But hey, you found a second photographer – you’re husband took some nice shots!

    Oh and this vinaigrette – definitely need to try it. I have this amazing balsamic fig that I can use for this.

  2. Having broken my back when I was younger I know how debilitating back pain can be. Just take care and do not rush things, we will all be here when you return. This sounds like a great salad dressing. Take it easy Diane

  3. Oh Pam, I know it’s got to be hard for you, but you know you have to take care of yourself and not push yourself too hard or the process will just take longer. Easier said then done, though, I know! Just take care of you!! At least you are starting out with the simple things….. I’m loving this vinaigrette! It could work with so many things.

  4. Oh! I was thinking about you this morning, as my husband complained of some back pain after bringing in a huge load of wood for the stoves! Heartening to see you beginning to blog again, but disheartening to know that you’re still uncomfortable! Take it easy and be well, dearie!
