Roasted Grape Tomatoes and Zucchini Topped with Feta and Chives

I wanted a simple, healthy, and quick side dish to pair with the chicken and orzo I was making for dinner. After looking in the fridge, I made roasted grape tomatoes and zucchini topped with feta and chives. My kids don’t care for zucchini so they weren’t impressed with this side dish. My husband and I, on the other hand, both loved it and thought it paired nicely with the rest of our dinner.

How to Make Roasted Grape Tomatoes and Zucchini Topped with Feta and Chives

Preheat oven to 350 degrees. Coat a large baking dish or baking sheet with cooking spray.

Place the grape tomatoes, zucchini, and minced garlic in the baking dish. Drizzle with olive oil, sea salt, and fresh cracked pepper, to taste. Toss to coat the veggies evenly.

Place into the oven and roast for 15 minutes. Remove from the oven and pour them into a serving bowl. Top with feta cheese and fresh chives. Serve immediately. Enjoy.

  • 1 (6 oz) container of grape tomatoes
  • 1 zucchini diced
  • 1 tbsp olive oil
  • Sea Salt and fresh cracked pepper to taste
  • Feta cheese
  • Fresh chives chopped

Instructions

  1. I used to sort of like it when my kids didn’t like something that I loved, it just made more for me. Now they like everything, I’m not so lucky anymore! If I were at your table I would gobble this up, it looks wonderful! Sorry 🙂

  2. Some of my kids love zucchini, and some don’t. They like it better when they grow it in the garden. This looks good; it would also be good quickly sauteed in a wee bit of olive oil, I think.

  4. Made this last night and it was very delicious. I didn’t have time to roast in the oven, so I did it all on the grill in my grill pan. Yum!
