Cobb Salad

I just found my new favorite salad. This may not be a traditional Cobb Salad because  I used turkey breast instead of chicken and feta cheese instead of blue cheese because that’s what I had on hand. This salad was topped perfectly with Fran’s Vinaigrette. Guess what I’ll be having for lunch tomorrow?

How to Make a Cobb Salad

Place the romaine lettuce and mixed greens in the bottom of a salad bowl. Arrange the onion, turkey, tomato, feta cheese, carrots, bacon, hard-boiled egg, and avocado in rows across the lettuce.

Serve immediately with Fran’s Vinaigrette or a dressing of your choice on the side. Enjoy.

Ingredients

  • 1 cup of romaine lettuce
  • 1 cup of mixed greens
  • 2 slices of turkey breast diced
  • 1 slice of bacon cooked & crumbled
  • ¼ avocado diced
  • 5 grape tomatoes sliced
  • 1 tbsp feta cheese
  • 2 tbsp carrots shredded
  • 1 hard-boiled egg sliced
  • 1 tbsp red onion sliced
  • Fran's vinaigrette or dressing of your choice

Instructions

  • Place the romaine lettuce and mixed greens in the bottom of a salad bowl. Arrange the onion, turkey, tomato, feta cheese, carrots, bacon, hard-boiled egg, and avocado in rows across the lettuce.

  1. Cobb salad is one of my favorite salads. I love your version with turkey and feta (and Fran’s vinaigrette)! I can’t wait to try it and I know it will be delicious!

  2. Now I’m sad because the only Cobb salads I get are from ChikFilA (it’s on the way home from the gym). I need to quit being so lazy with salads and make my own!

  3. I’ve never had a Cobb Salad but yours looks perfect and seems close enough to be a bear the name or you could use a dressing with Greek herbs, add a few olives and call it “The Greek Cobb Ala Pam.”

  4. Great recipe! I’ve become a big fan of Cob Salads the past couple of years and will often times judge a restaurant by its Cob Salad! Ha,ha!

  6. This was wonderful. Made it with leftover roasted turkey breast, fresh cherry tomatoes, cukes and green beans from the garden. Perfect summer meal. Pam, I absolutely love your blog.
