Egg & Avocado Open Faced Sandwich

Egg & Avocado Open Faced Sandwich

I wanted a healthy breakfast to start the day off right and to give me some extra energy for my workout at the gym. I grabbed a leftover piece of French bread and toasted it then spread some avocado over it followed by slices of hard-boiled egg. I seasoned it with sea salt, freshly cracked pepper, and cayenne pepper. It was SO DELICIOUS! I usually have a poached egg but I really liked the hard-boiled egg on there. It was filling without being heavy and the sandwich paired nicely with the fresh berries. This was a healthy and satisfying breakfast that I will probably have again tomorrow. 🙂

  1. Hi Pam!
What a GREAT quick breakfast before a workout. Quick because I usually have hard boiled eggs in the fridge for Marion:) I may just give this a try although, I think I will omit the yolks and just go with the whites.

Thanks so much for sharing, Pam…
