Roasted Garlic Mashed Red Potatoes

I made a pot roast for dinner tonight and wanted mashed potatoes to pair with it. I decided to mash red potatoes with their skin on and make them extra special by adding a bulb of roasted garlic and a dollop of sour cream. These mashed potatoes had a great garlic flavor and the sour cream gave them a nice tang. The pot roast gravy tasted fantastic on these potatoes and we all loved them– especially me.

How to Make Roasted Garlic Mashed Red Potatoes

Roast the garlic – click here for the instructions.

Cook the potatoes in a large pot of boiling salted water until tender, about 15-20 minutes.

Drain the potatoes; return to the pot, stirring, over low heat for one minute. This dries the excess moisture from the potatoes so they can absorb the milk and butter.

Stir in the roasted garlic (squeezed from the skin), milk, butter,  sea salt, and freshly cracked pepper, to taste. Smash the potatoes with a hand masher until you reach your desired consistency.  Serve immediately. Enjoy.

Servings: 4

Ingredients

  • 1 bulb of roasted garlic click the link up above for instructions on roasting
  • ¾ lb red potatoes cut into 1-inch chunks
  • 1/4-1/3 cup of milk
  • 2 tbsp butter softened
  • 1-2 tbsp sour cream to taste
  • Sea salt and freshly cracked pepper to taste

  1. Yum! This is the traditional recipe for our Thanksgiving potatoes and we love it! My son, Eric, makes them every year! Great that you are sharing this with the world!

  2. I really wish I had some of this leftover in the fridge right now to make potato pancakes. We like ours rustic like this although sometimes we will use a ricer those rare times we are in the mood for a smoother texture.
