Oven Roasted Corn on the Cob with Garlic Butter

Corn on the cob doesn’t get much better than this. Seriously! The corn is perfectly cooked – crisp and sweet without being soggy. Garlicky butter spread over the top with a bit of sea salt and freshly cracked pepper – it is SO GOOD! We all gobbled up our corn last night and thought it was amazing! I’ll be buying more corn next week because I want this again…SOON!

How to Make Oven Roasted Corn on the Cob with Garlic Butter

Combine the softened butter with the minced garlic and chopped parsley. Set aside.

Preheat the oven to 350 degrees. Place the corn (still inside the husks) directly onto the oven rack. Roast for 30 minutes. Peel down the husks then use them as a handle when eating (I trimmed mine down a bit). Serve slathered with the garlic butter then season with sea salt and freshly cracked pepper, to taste. Enjoy.

Ingredients

  • 2 tbsp butter softened
  • 2 cloves of garlic minced
  • 2 tsp fresh parsley finely chopped
  • 4 ears of corn on the cob
  • Sea salt and freshly cracked pepper to taste
