Tropical Parfait

It’s been over 90 degrees for several days here in Portland–UGH. I am not a fan of that kind of heat! I thought a tropical parfait would cool my kids down after school today and I was right. Parfaits are a fun and easy way to make simple ingredients seem fancy. Both of my kids loved the combination of fruit, yogurt, and granola topped with shredded coconut and they gobbled up every single bite. These tropical parfaits made a fun and tasty after-school treat and put huge smiles on my kids’ faces.

Ingredients:

  • Granola
  • Vanilla yogurt
  • Kiwi, peeled & sliced
  • Pineapple, sliced
  • Pomegranate seeds
  • Shredded sweetened coconut

 

How to Make a Tropical Parfait

Sprinkle some granola in the bottom of a fancy dessert dish then top with a few spoonful’s of vanilla yogurt.

Sprinkle the yogurt with a little bit of kiwi, pineapple, coconut, and pomegranate seeds then top with a few more spoonful’s of yogurt. Finish the parfait off with more fruit, coconut, and granola. Serve immediately. Enjoy.

  • 2 Parfait Glasses

Ingredients

  1. That’s the kind of thing I love for breakfast! It was hot here for about 3 days, and it’s been in the 60s since. I’d love to have the weather settle down and be just hot instead of see-saw temperatures.

  3. It’s been in the 90s here, too. Typical for this part of the country, but that doesn’t mean I have to like it! Parfaits were really popular when I was a kid — my mom always served them to company. Always a favorite of mine, so glad to see yours. It’d be perfect any time of the day, not just for dessert!

  4. It’s been toeing the 90’s here lately…and I HATE IT. I mean, I don’t want winter to come back, but SHEESH…what happened to spring?!
