Mini Pancakes with Fruit, Coconut, and Chocolate

In honor of National Pancake Day, I was recently sent some Hungry Jack Buttermilk Pancake & Waffle Mix along with Hungry Jack Maple Syrup, measuring cups, and T-fal’s newest 12” Non-Stick Fry Pan, The OptiCook. The pan is beautiful and I was ready to get cooking, so I decided to surprise my kids with these fun and tasty mini pancakes as their after-school snack today. I made a bunch of different flavor combinations using fresh blueberries, raspberries, mini chocolate chips, and coconut. The batter was a snap to whip together and only needed water which means it’s perfect for those busy weekday mornings. Cooking the pancakes on my new T-fal fry pan was a dream. They were so easy to flip and cooked evenly to a nice golden brown. The pancakes turned out fluffy and delicious and were extra tasty dipped in the buttery maple syrup. Both of my kids loved them and thought it was fun to eat pancakes as a snack. Thank you so much T-fal and Hungry Jack for the wonderful gift package!

Mini Pancakes with Fruit, Coconut, and Chocolate

How to Make Mini Pancakes with Fruit, Coconut, and Chocolate

Combine the Hungry Jack Pancake Mix together with the water, vanilla, and cinnamon. Whisk until well combined.

Heat the nonstick skillet over medium heat. Coat with coconut oil cooking spray. Ladle batter into the pan making five small pancakes. Sprinkle whatever combination of fruit, coconut, and chocolate that you would like.

Once the top of the pancakes starts to bubble a bit, gently flip them over and cook the other side for a minute or two, or until done. Repeat with the remaining batter.

Remove the pancakes from the nonstick skillet and place them on a serving plate. Sprinkle the mini with powdered sugar and serve with syrup on the side for dipping. Enjoy!

Yield: 14 mini pancakes 

Total Time: 10 minutes +/-

Ingredients:

1 cup Hungry Jack Pancake and Waffle Mix
3/4 cup water
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
Blueberries
Raspberries, torn into pieces
Mini chocolate chips
Shredded sweetened coconut

Directions:

Combine the Hungry Jack Pancake Mix together with the water, vanilla, and cinnamon. Whisk until well combined.

Heat the nonstick skillet over medium heat. Coat with coconut oil cooking spray. Ladle batter into the pan making five small pancakes. Sprinkle whatever combination of fruit, coconut, and chocolate that you would like.

  5. I’ve always loved my pancakes plain with honey, but topped with strawberries is a close second. Hungry Jack is a terrific mix! I think we will be making a few dozen pancakes when most of the kids are home the weekend of the 20th for Ashleigh’s baby shower!

  6. We always make our pancake batter extra thin and large, and use the pancake as a tortilla for egg burritos. I would use this for that.

  8. Hello! I love your blog & have made so many of your awesome recipes, Pam! If I won this t-fal pan, I would make banana pancakes. I’d put the batter in pan, slice bananas very thin and place them atop of the pancake batter. Next, flip when the one side is ready & the banana side would get crispy & gooey & good! Thanks again.

  12. My perfect pancake would have cinnamon, walnuts, warm maple syrup and crispy edges. The crispy edges are my favorite.

  13. I love this coconut idea. I’ve tried a lot of different mix-ins but it never occurred to me that I should use coconut!
