Strawberry Fruit Leather

My nephew has been working really hard in school lately. I wanted to send him a treat to let him know how proud I am of him, so his mom suggested fruit leather. I thought it sounded like fun so I picked up a bunch of fresh strawberries at the store. I blended the strawberries down and added a bit of agave, to taste, to sweeten up the mixture. Once satisfied with the flavor, I proceeded to spread the fruit in an even thin layer on baking sheets covered with a silpat mat. I baked the fruit at the lowest setting of my oven, 170 degrees, overnight, for about 7-8 hours. Don’t be intimidated by the long cooking time, this is a fun and super simple project to do with your kids. The result is a delicious and healthy snack that your children will love. My kids ate the edges I trimmed off and declared it to be super tasty so I am hoping my nephew will agree.

How to Make Strawberry Fruit Leather

Preheat the oven to 170 degrees. Place the racks in your oven in the center. Cover two baking sheets with silpat mats.

Wash and hull the strawberries before placing them into a blender. Blend until smooth and creamy then taste and add agave or honey, as needed. Blend a little bit more to make sure it is well combined.

Pour some of the strawberry mixture onto the center of the silpat mat. Using a rubber spatula, spread the mixture, adding more when needed, until a thin even layer. Repeat with the remaining baking sheet.

Bake for 7-8 hours, until the fruit, is no longer tacky. Remove from the oven and let cool.

Remove the fruit leather carefully from the silpat mat and place the smooth side down on parchment paper. Cut the edges so they are straight, then cut into strips. Roll the strips and tie them with a string. Store in an airtight container. Enjoy.

Yield: 15-20 fruit leather strips +/-

Total Time: 60 minutes +/-

Agave, to taste
