Mixed Berry Crumb Bars

Since this is the last week of school, I decided to make something extra special for my kids’ school lunch treat. I had a bunch of fresh ripe berries from the farmer’s market so I decided to make some mixed berry crumb bars. The smell in my house while these bars baked was unbelievably wonderful and it literally made my mouth water. I am happy to report, my kids LOVE these bars.

How to Make Mixed Berry Crumb Bars

Preheat oven to 375 degrees. Line a 9 x 9 pan with parchment, and spray with coconut oil spray.

Beat together in a bowl, the flour, sugar, baking powder, and salt. Add the butter, egg, egg yolk, vanilla, and half of the lemon zest. Beat on low speed until the butter is evenly distributed and all of the mixture is crumbly.  Pour a bit more than half of the mixture into the bottom of the prepared pan. Using your hand, firmly push down to evenly press the dough into the pan.

Clean berries in a colander. Slice the strawberries and large blackberries in half. Combine all of the berries together in a bowl with the sugar, cornstarch, and remaining lemon zest; mix until well combined. Pour the berry filling over the crust, then crumble the remaining dough over the top of the berries.

Place into the oven and bake for approximately 40 minutes, until the top is light golden brown.

Cool completely on a wire rack, then remove from the baking pan and cut into squares. Enjoy.

Ingredients:

Crust and Topping:

2¼ cups of flour
¾ cup of white sugar
¾ tsp baking powder
¼ tsp salt
12 tbsp cold unsalted butter, diced
1 egg
1 egg yolk
1 tsp pure vanilla extract
1 tsp lemon zest, divided

Mixed Berry Filling:

3½ cups of fresh berries, strawberries, blackberries, blueberries, and raspberries
6 tbsp white sugar
3 tsp cornstarch

  1. I didn’t realize all the kids weren’t out of school yet, Pam. In PA the kids were done last week. Silly me, in NY we never got out of school before the 21st. Anyhoo, I’m sure your kids were thrilled with these fruitful crumb bars. I know I would be!!!
