Zesty Cucumber Salad

My kids pack their lunches for school but seem to be in a rut lately. To give them a new option, I made this zesty cucumber salad. I saw this recipe on Fresh April Flours that looked tasty and I had all the ingredients on hand–I love that! I made this salad in minutes which is pretty handy on a busy weeknight. I had my kids try it after an hour and they both absolutely LOVED it. My son kept nibbling on it while I was taking photos and they are both excited to have something new in a few of their lunches this week.

How to Make a Zesty Cucumber Salad

Peel, quarter lengthwise, and slice the cucumber. Place the cucumber and diced onion in a large bowl then add the vinegar, ranch dressing dry seasoning, and black pepper, to taste. Mix until well combined. Cover and refrigerate for 1 hour prior to serving. Refrigerate leftovers in a sealed container for a few days. Enjoy.

Ingredients

  • 1 English cucumber peeled, quartered lengthwise, sliced
  • 2 tbsp sweet yellow onion diced
  • 3 tbsp seasoned rice vinegar
  • 1 tbsp ranch dry seasoning from packet
  • Freshly cracked black pepper taste

Instructions

  1. Hi. I was just wondering why you show an onion in the picture of ingredients but you don’t show adding an onion in the recipe.

      Sorry! I have corrected the recipe to show 2 tbsp diced sweet yellow onion. Thanks for letting me know it was missing.

  2. So simple, yet so refreshing! A great side dish, especially in the summertime.

    I sampled a salad similar to this the other day and they had used huge chunks of raw white onion. It was unbearable – I had one piece of it and had onion breath the whole day! The flavor was way too strong for sure.

    If someone wanted to add onion to their recipe, I would highly recommend a red onion. They are perfect raw and would give the salad a pop of pretty color!
