Dill Cucumber Salad

I wanted a light and refreshing salad to serve with the salmon I was making for dinner so I threw this dill cucumber salad together. I make this salad often but tried something a little different this time. I salted the cucumber slices and then set them in a strainer for 30 minutes prior to preparing the salad. This step allows the liquid to release from the cucumber slices so they will stay nice and crisp when tossed with the vinegar. This dill cucumber salad turned out delicious – we all loved the fresh dill flavor and the crispness of the cucumber.

How to Make a Dill Cucumber Salad

Place the cucumber slices in a strainer placed over a plate. Season with 1/4 teaspoon of salt then toss to coat evenly. Place in the refrigerator for 30 minutes.

Place the drained cucumber slices in a serving bowl. Add the vinegar, red onion slices, fresh dill, and crushed red pepper flakes, to taste; toss to coat evenly. Place in the refrigerator for 30 minutes before serving.

Toss before serving then taste and season with sea salt and freshly cracked pepper, to taste. Serve and enjoy.

  • 1 English cucumber, washed well & sliced thinly
  • ¼ tsp sea salt
  • 3 tbsp seasoned rice vinegar
  • ¼ red onion, sliced very thinly
  • Fresh dill, to taste
  • Crushed red pepper flakes, to taste
  • Sea salt and freshly cracked pepper, to taste, if needed

Instructions

  • Place the cucumber slices in a strainer placed over a plate. Season with 1/4 teaspoon of salt then toss to coat evenly. Place in the refrigerator for 30 minutes.
