Parmesan Crusted Delicata Squash

This parmesan-crusted delicata squash from a recipe I found on Skinnytaste was SO delicious and easy to make! I loved the crisp edges with the cheesy baked tops and the soft center. My husband and I sat around the kitchen counter during a recent lunch and happily ate them straight from the baking sheet. We saved some for our kids and they finished them off within minutes. I’m so glad the skin of delicata squash is edible and delicious, which makes preparing this side dish even easier. I loved the combination of herbs and parmesan cheese which made the squash extra special.

How to Make Parmesan Crusted Delicata Squash

Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.

Cut the delicata squash in half lengthwise, scoop out the seeds with a spoon, then slice into 1/2 inch thick slices and place them in a large bowl. Drizzle the olive oil, sea salt, freshly cracked pepper, and garlic powder, to taste on top. Gently toss to evenly coat each slice thoroughly. Lay them flat on the prepared baking sheet.

Combine the freshly grated parmesan, parsley, thyme leaves, and lemon zest together in a small bowl; mix thoroughly.

Sprinkle the top of each delicata squash slice evenly with the cheese and herb mixture.

Bake in the center of the oven for 20-25 minutes, or until golden brown on the edges. Serve immediately. Enjoy.

  • 1 delicata squash, washed and dried
  • 1 tbsp olive oil
  • Sea salt and freshly cracked pepper, to taste
  • Garlic powder, to taste
  • ¼ cup parmesan, freshly grated
  • 2 tbsp fresh parsley, chopped
  • ½ tsp fresh thyme leaves
  • Zest from 1 lemon

  1. I’ve gotten that type of squash in my Misfits Markets box, and didn’t know what it was called, but it roasted up wonderfully. I’ll have to try this the next time one appears!

      I find delicata squash in most grocery stores in the produce isle. Trader Joe’s is also known to carry them if you have a store nearby. I hope you find some–it’s a very delicious type of squash.
