Spinach Salad with Persimmons, Pomegranate Seeds and Candied Pecans

This spinach salad with persimmons, pomegranate seeds, and candied pecans is a re-creation of a salad I had last fall. I love the combination of sweet persimmons, tart pomegranate seeds, crunchy candied pecans, and creamy goat cheese. I am so glad I finally tried re-creating this salad because it’s not only beautiful it’s delicious too. I’m thinking it would be wonderful for the upcoming Thanksgiving holiday.

How to Make a Spinach Salad with Persimmons, Pomegranate Seeds, and Candied Pecans

Make the simple vinaigrette–click here for the recipe.

Place the spinach and onion in a large serving bowl. Drizzle the vinaigrette to taste; toss to coat evenly. Top the salad with sliced persimmons, pomegranate seeds, candied pecans, and goat cheese crumbles. Serve immediately with extra vinaigrette on the side. Enjoy.

Ingredients

  • Fran's Vinaigrette *Click link up above for the recipe
  • 4 cups baby spinach
  • ¼ small red onion, sliced *Soak slices in ice water for a few minutes if they are too strong in flavor.
  • 1 persimmon, peeled & sliced
  • 2 tbsp pomegranate seeds
  • 2 tbsp candied pecans
  • Goat cheese crumbles, to taste

Instructions

  • Place the spinach and onion in a large serving bowl. Drizzle with the vinaigrette to taste; toss to coat evenly.
  • Top the salad with sliced persimmons, pomegranate seeds, candied pecans, and goat cheese crumbles.
  • Serve immediately with extra vinaigrette on the side. Enjoy.

  1. I’m not a fan of raw onions, so I’d leave those out, but this salad looks amazing! I had never had a persimmon until my daughter brought one home last month!

    Absolutely beautiful and health version; I guess these can be for dinner or lunch because its preety much heavy for a supper or brunch or may be as a snack, love the combination you always try to innovate your recipe 🙂 Thank you so much !
