Spiced Clementine Cake

I adapted this spiced clementine cake from a recipe I found on Unicorns in the Kitchen. I had a bowl full of clementines on the counter that weren’t getting eaten and looking like they were days from going bad so I went in search of recipes. I found this simple and easy recipe for a clementine cake with lots of spices and served topped with whipped cream. It’s a simple cake, that isn’t too sweet and is very tasty–my whole family loved it, especially my husband.

How to Make Spiced Clementine Cake

Preheat oven to 350 degrees. Coat an 8 x 8 baking dish with cooking spray.

Combine the flour, baking powder, cinnamon, baking soda, ginger, allspice, cardamom, and salt together in a bowl; mix well.

Whisk together the melted butter and white sugar until well combined. Add the eggs and whisk. Add in the fresh clementine juice and zest then whisk until well combined.

Gradually add the flour mixture to the wet ingredients and mix until incorporated.

Pour the cake batter in the prepared baking pan and bake for 30-35 minutes, or until a tester inserted in the center comes out with very little crumb. Remove from the oven and allow the cake to cool completely.

When ready to serve, sprinkle the top with powdered sugar then slice. Serve with whipped cream on top, if desired. Enjoy.

Ingredients

  • cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ½ tsp ginger
  • ½ tsp allspice
  • ½ tsp cardamom
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup white sugar
  • 2 eggs, room temperature
  • ½ cup freshly squeezed clementine juice
  • 1 tbsp clementine zest

Instructions

  • Preheat oven to 350 degrees. Coat an 8 x 8 baking dish with cooking spray.
  • Combine the flour, baking powder, cinnamon, baking soda, ginger, allspice, cardamom and salt together in a bowl; mix well. 
  • In a separate large bowl, whisk together the melted butter and white sugar until well combined.
  • Add the eggs and whisk.
  • Add in the fresh clementine juice and zest then whisk until well combined. 
  • Gradually add the flour mixture to the wet ingredients and mix until incorporated. 
  • Pour the cake batter in the prepared baking pan and bake for 30-35 minutes, or until a tester inserted in the center comes out with very little crumb. Remove from the oven and allow the cake to cool completely.

  2. i do believe this is the first clementine cake i’ve ever seen, and it’s a looker! i love a simple snack cake like this–great recipe!
