Skillet Gnocchi with Bacon, Tomatoes and Spinach

This skillet gnocchi with bacon, tomatoes, and spinach was a quick and easy lunch I threw together in minutes and it used up bits and pieces I found in the refrigerator. I love those kinds of recipes! I sauteed the onions, gnocchi, tomatoes, spinach, and garlic together in the butter then topped the dish off with the crumbled bacon. This dish took less than 30 minutes to make and my kids and I loved it.

How to Make Skillet Gnocchi with Bacon, Tomatoes, and Spinach

Cook the bacon bits in a skillet over medium heat until golden brown; remove from the skillet and place on a paper towel to drain the grease. Discard the bacon grease from the skillet.

Melt the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes. Next, add the remaining butter, skillet gnocchi and tomatoes then cook, stirring occasionally for 4 minutes.

Finally, add the baby spinach, minced garlic, and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted. Season with sea salt and freshly cracked pepper, to taste. Serve immediately with fresh parmesan on the side. Enjoy.

Ingredients

  • 2 pieces of bacon, cut into small pieces
  • 1 tbsp butter, divided
  • ¼ small yellow onion, sliced
  • 1 (12 oz) bag of skillet gnocchi
  • 1 handful of grape tomatoes
  • cups baby spinach
  • 2 cloves of garlic, minced
  • Pinch of crushed red pepper flakes
  • Sea salt and freshly cracked pepper, to taste
  • Fresh parmesan, grated

Instructions

  • Melt half of the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes.
  • Add the remaining butter, skillet gnocchi and tomatoes then cook, stirring occasionally for 4 minutes. 
  • Add the baby spinach, minced garlic and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted.
  • Season with sea salt and freshly cracked pepper, to taste. Serve immediately with fresh parmesan on the side. Enjoy.

  1. This sounds fantastic but it would not be so quick for me as I suspect I would have to make the gnocchi. I do not remember ever seeing it for sale here. Keep well ,Diane

  2. I would like to know what “skillet gnocchi” is? Is it the same as frozen because that is all I see in our stores.

      In my local Safeway, it is in a refrigerated section with the fresh pasta near the deli counter. I hope this helps!
