Strawberry Hand Pies with Vanilla Glaze

I made these strawberry hand pies with vanilla glaze because our strawberry patch is bursting with berries right now. These cute little fruit hand pies are super easy to make when you use pre-made pie crust but they would also taste wonderful with a homemade crust as well. To make these pies, I used a biscuit cutter to cut out 24 pieces of the pie dough (or you can also use a jar or glass). I then quickly macerated some freshly picked strawberries with sugar, vanilla, and cornstarch for a few minutes. It’s important to note that these pies get really juicy when they bake so you need to avoid putting a lot of the juice from the strawberries in each pie. It’s also very important to seal the edges really well and crimp each of them with a fork. Once the pies are baked, let them cool completely before adding the vanilla glaze. My entire family loved these strawberry hand pies and thought they were super tasty.

How to Make Strawberry Hand Pies with Vanilla Glaze

Roll out both of the pie crusts on a lightly floured surface. Cut out 24 rounds with a cookie cutter (a glass jar or anything round will work too). You’ll need to re-roll the dough to get all 24 rounds.

Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

Combine the strawberries, sugar, cornstarch, and vanilla extract together in a bowl; mix until well combined and allow to sit for a few minutes to macerate.

Place a spoonful of the macerated strawberries (without juice) in the center of 12 of the rounds. Top each round with another pie round and press the edges together very firmly. Crimp all edges with a fork.

Brush some egg wash on the top of each hand pie then cut an X in the top of the crust for venting. Sprinkle each hand pie with some turbinado sugar.

Bake for 20-25 minutes, turning halfway through baking, until golden brown. Remove from the oven and allow to cool.

Make the vanilla glaze by combining the powdered sugar, milk, and vanilla extract until smooth.

Place the cooled hand pies on a baking rack over parchment paper. Drizzle the vanilla glaze on top of each pie. Serve and enjoy.

Ingredients

Strawberry Hand Pies:

  • cups fresh strawberries, diced
  • 2-3 tbsp sugar, to taste, depending on sweetness of berries
  • 2 tsp cornstarch
  • ½ tsp vanilla extract
  • 1 box pre-made pie crusts (two crusts total)
  • 1 small egg, well beaten
  • Turbinado sugar

Vanilla Glaze:

  • ½ cup powdered sugar
  • 1-2 tbsp heavy cream (or milk), to taste, per desired glaze thickness
  • ¼ tsp vanilla extract

      I’ve never tried it with frozen berries because I was afraid the strawberries would release too much liquid while baking. If you give it a try, please let me know how they turn out.
