Chicken Souvlaki

This lemony chicken souvlaki is really quick & easy to make, tastes delicious, and it’s very healthy. I recently had lunch at a little local Greek restaurant with a friend and I had chicken souvlaki for the first time. I loved it so much that I decided to try to recreate it at home. I found a recipe on Gimme Some Oven that sounded perfect so I gave it a try and I’m glad I did–it was wonderful.  The chicken breast is cut into bite-sized pieces then marinated in lemon juice, olive oil, minced garlic, oregano, and crushed red pepper flakes for a while, then pop them on skewers and grill or broil them. I served these tasty chicken souvlaki skewers with some garlic rice, a greek salad, tzatziki sauce, and warm pita bread for a healthy and delicious dinner my entire family enjoyed. I’m looking forward to the leftovers for lunch tomorrow.

How to Make Chicken Souvlaki

Combine the olive oil, lemon juice, minced garlic, dried oregano, crushed red pepper flakes, sea salt, and freshly cracked pepper, to taste, in a large ziplock bag; seal and squish around until well combined.

Add the chicken pieces to the zip lock bag, seal, and refrigerator for 30 minutes up to 2 hours.

Remove the chicken pieces from the marinade and thread them onto skewers. Discard the bag and the remaining marinade. Season the skewers with a bit more sea salt and freshly cracked pepper, if desired.

Preheat grill to medium-high.  Place skewers on the grill and cook for 6-8 minutes, turning once, until the chicken is golden brown and cooked through.

Side Note: You can use a grill pan over medium-high heat with a bit of olive oil until HOT. Add the skewers and cook on all sides until golden brown, about 5-7 minutes on all sides, or until cooked through.

Preheat the oven to broil and place the rack about 5-6 inches from the top of the oven.  Place skewers on a large baking sheet, and broil for 6-8 minutes, turning once, until the chicken is golden brown and cooked through.

Transfer skewers to a serving plate and sprinkle the top with fresh chopped parsley. Serve with garlic rice, a greek salad, tzatziki sauce, and warm pita bread, if desired. Enjoy.
