Honey Butter Roasted Sweet Potatoes with Cinnamon

These honey butter-roasted sweet potatoes with cinnamon are incredibly easy to make and they make a wonderful side dish for breakfast or dinner, a terrific salad topper, or a healthy holiday side dish. I toss the peeled and diced sweet potatoes in a combination of melted butter, honey, and cinnamon until evenly coated then roast them until tender and golden brown and caramelized. It’s hard not to eat these honey butter-roasted sweet potatoes with cinnamon straight from the baking sheet–they are so tasty!
