Loaded Baked Potato Bites

Loaded Baked Potato Bites

These incredibly tasty baked potato bites are loaded up with sharp cheddar cheese, sour cream, crispy bacon bits, and chives. These little beauties make a great appetizer or party snack and they are the perfect appetizer for St. Patrick’s Day or the Super Bowl. You simply toss the potato slices in melted butter then season with salt & pepper before baking them until golden brown and tender. Melt some cheese on top then add the toppings and you suddenly have one delicious finger food. My kids devoured this tray in minutes and they both loved these little loaded baked potato bites.

  1. How thick do you slice the potato? The recipe gives no clue. From the photo it looks like they’re about a half-inch thick, but it’s hard to tell.

  2. I’m having a party and was wondering if you can bake the potatoes ahead and dress them last minute?

    1. Liza,

To be honest, I’ve never tried making them in advance so I’m not sure how they would turn out. If you give it a try, please let me know how it goes.
