Cranberry Brie Bites

Buttery puff pastry, melty brie, and cranberry sauce all in one perfect bite. These little cranberry brie bites are wonderful for holiday entertaining and they disappear quickly.

I knew I would make these little cuties as soon as I saw them on Kitchen Sanctuary. I had some homemade leftover homemade cranberry sauce from our Tuscan turkey roulade dinner that needed to be used up. Thankfully, I also always have brie & puff pastry on hand so this recipe was a cinch to throw together. I really liked that you stack two layers of puff pastry together to make a higher puff for a prettier presentation. The gooey brie paired beautifully with the golden pastry and the sweet & tart cranberry sauce made these little cranberry brie bites extra special.

How to Make Cranberry Brie Bites

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.

Unroll the thawed pastry and brush evenly with egg wash. Cut the pastry into 24-30 small even squares using a sharp knife or pizza cutter.

Place one square on top of another (egg side up) then place them on the prepared baking sheet; repeat with the rest of the pastry.

Bake for 10 minutes then take them out of the oven. Place the small slices of cheese on top of each pastry puff. Place back into the oven to bake for 1-2 minutes to melt the brie.

Remove from the oven and place immediately on a serving tray. Top with a small dollop of cranberry sauce and a few fresh thyme leaves. Serve & enjoy.

  • 1 small egg, well beaten
  • 4 oz brie, sliced into small squares
