Garlicky Green Beans Almondine

We eat green beans as a side dish at least a few times a month because it’s a vegetable my whole family enjoys. I’ve always loved the classic French dish of green beans almondine but decided to elevate it recently by adding sautéed shallots, lots of garlic, and fresh lemon juice. This is not only a super easy recipe to throw together but it also pairs well with nearly any main entree.

How to Make Garlicky Green Beans Almondine

Bring a large pot of water to a boil over high heat. Season the water very well with kosher salt.

Blanch the green beans in the boiling water for 2-3 minutes, stirring occasionally, or until they are just crisp-tender.

Add the butter to the skillet and once it has melted, add the sliced shallots and minced garlic. Sauté for an additional 1 to 2 minutes, stirring constantly, until fragrant and lightly caramelized.

Using tongs, transfer the crisp-tender green beans from the boiling water directly to the skillet. Sauté briefly, gently tossing the green beans with the almond mixture until evenly combined and the green beans are tender. Add the lemon juice & zest, toss once again, and season with sea salt and freshly cracked pepper, to taste. Serve immediately. Enjoy.

Ingredients

  • ½ lb green beans, ends trimmed
  • 2 tbsp almond slices
  • 2 tbsp butter
  • ½ small shallot, sliced
  • 2 cloves of garlic, minced
  • Juice & zest from 1/2 a lemon
  • Sea salt and freshly cracked pepper, to taste

Instructions

  • Sauté for an additional 1 to 2 minutes, stirring constantly, until fragrant and lightly caramelized. 
  • Using tongs, transfer the crisp-tender green beans from the boiling water directly to the skillet. Sauté briefly, gently tossing the green beans with the almond mixture until evenly combined and the green beans are tender.
