Nothing says summer like popsicles, and what popsicle could be better than these delicious & refreshing triple berry coconut popsicles?

We will be dealing with 100+ degree temperatures in Oregon this week so I made some tasty triple berry coconut popsicles to help keep us cool. I cooked down some strawberries, blackberries, and raspberries together until they were a sweetened compote which I then strained to remove the seeds. After I combined honey, vanilla bean, and coconut milk together, I poured them into my popsicle molds and froze them for 8 hours. These tasty treats are creamy, sweet, tart & are keeping us cool!

How to Make Triple Berry Coconut Popsicles

Place the berries, sugar, and lime juice in a small saucepan over medium heat. Cook, stirring frequently, for 10-15 minutes, or until the berries have broken down and have started to thicken. Strain through a fine sieve if you want to remove the seeds & pulp. Set aside in the refrigerator to cool for 20 minutes.

Whisk together the coconut milk, vanilla bean seeds, and honey until well combined and sweetened to your liking. Set aside in the refrigerator while the fruit is cooling.

Evenly distribute a few spoonfuls of the coconut milk mixture into each popsicle mold followed by a few spoonfuls of the berry mixture until the molds are full. You can choose to mix them with a skewer or keep them layered.

Freeze for 8 hours or overnight. Enjoy.

Ingredients

  • ½ cup strawberries, hulled & sliced
  • ½ cup blackberries
  • ½ cup fresh raspberries
  • 3-4 tbsp sugar, +/- to taste, depending on the sweetness of the fruit
  • Juice from 1/2 a lime
  • 1 (14 oz) can of full-fat coconut milk
  • 1 vanilla bean, seeds (you can also use extract) **Split bean down the center and use the back of the knife blade to scrape seeds out**
  • 1-2 tbsp honey, to taste

  1. Is there anything you don’t make Hard to believe the temps. I always thought that Maine and the PNW where where you went to beat the heat but not this summer – I guess it’s still cool along the coasts.
