Preheat the oven to 350 degrees. Line a baking sheet with silpat mat.
Combine the flour, salt, and baking soda together; mix well.
Cream the butter, coconut oil, sugars, egg, and vanilla together until creamy and smooth with a beater. Slowly mix in the flour, until combined. Stir in 1/2 cup mini chocolate chips and coconut.
Roll dough into tiny balls (about 2 teaspoons of dough). Place on the baking sheet and slightly flatten with the palm of your hand. Place a few mini chocolate chips on the top of each cookie, if needed.
Place into the oven and bake for 8 minutes or until cookies are golden brown and set. Remove from the oven and let cool on baking sheet for two minutes. Transfer to a wire rack to cool.
