Coat a baking dish with cooking spray then add the baby red potatoes. Drizzle the potatoes with olive oil then season with sea salt and freshly cracked pepper, to taste.
Place into the oven and roast for 10 minutes then toss them. Continue to roast for an additional 10 minutes, or until tender and cooked through.
Remove the roasted potatoes from the oven and drizzle with a bit more olive oil, freshly chopped parsley, and minced garlic; toss until evenly coated then place back into the oven for 2-3 minutes.
Remove from the oven and serve immediately. Enjoy.
