Sweet Cherry Almond Bars

  • 2 ½ cups sweet cherries, pitted, halved & roughly chopped
  • 2 tbsp white sugar
  • Juice from 1/2 small lemon
  • ½ tsp almond extract
  • 1 tbsp cornstarch

Shortbread Crust & Topping:

  • 1 cup flour
  • 1/4 cup almond flour
  • 1/2 cup white sugar
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/2 cup unsalted butter, cut into small pieces
  • 1 egg yolk
  • 1 tsp almond extract
  • ¼ cup thinly sliced almonds


  • Preheat the oven to 350 degrees. Line an 8x8 baking dish with a bit of parchment paper, if desired. Lightly spray the baking dish and parchment with cooking spray.
  • Combine the cherries, sugar, cornstarch, lemon juice and almond extract in a bowl; mix well and set aside. 
  • Pour the flour, almond flour, sugar, baking powder, and salt together in the bowl of a food processor; pulse until well combined.
  • Add the chopped butter, egg yolk, and almond extract; pulse until the dough is crumbly. 
  • Press 2/3 of the dough in the bottom of the prepared baking dish to form the crust.
  • Top the crust with the cherries and their juices.
  • Crumble the remaining dough evenly over the cherries then top with thinly sliced almonds. 
  • Place into the oven and bake until golden brown and bubbling, about 35-40 minutes, turning the dish halfway through baking.
  • Remove from the oven and allow to cool on a wire rack until cooled. Cut and serve. Enjoy.
