Cook the bacon bits in a cast iron skillet over medium heat until golden brown; remove from the skillet and place on a paper towel to drain the grease. Discard the bacon grease from the skillet.
Melt half of the butter in the same skillet over medium-high heat. Add the onion and cook, stirring often, for 3-4 minutes.
Add the remaining butter, skillet gnocchi and tomatoes then cook, stirring occasionally for 4 minutes.
Add the baby spinach, minced garlic and crushed red pepper flakes. Cook, stirring constantly, for 1-2 minutes or until the spinach is wilted.
Season with sea salt and freshly cracked pepper, to taste. Serve immediately with fresh parmesan on the side. Enjoy.
