Ingredients
Cinnamon Apple Cake:
½cupvegetable oil
½cupsour cream
2largeeggs
1tspvanilla extract
1½cupsflour
¾cupwhite sugar
2tspbaking powder
1tspcinnamon
½tspbaking soda
Pinch of salt
1cupred apple, peeled and diced*1 large or 2 small
Cinnamon Topping:
¼cupwhite sugar
1tbspmelted unsalted butter, cooled
1tspcinnamon
Glaze:
¼cuppowdered sugar
2-3tspmilk, to taste, depending on desired thickness
Instructions
Preheat the oven to 350 degrees. Coat a 9-inch round cake pan with cooking spray.
Make the cake by combining the oil, sour cream, eggs, and vanilla in a small bowl; whisk until combined.
In a separate bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt together until well combined. Add the apples and mix until evenly coated.
Gradually add the wet ingredients to the dry ingredients until just combined. Pour batter into the prepared cake tin and spread out evenly with a rubber spatula. The batter will be very thick.
Make the cinnamon topping by combining the cooled melted butter with the sugar and cinnamon until well combined. Sprinkle evenly over the top of the cake.
Bake the cake for 30-35 minutes, making sure to turn halfway through baking, until a tester inserted in the center comes out clean. Transfer to a wire rack to cool.
Make the glaze by combining the powdered sugar and milk together until creamy, smooth, and your desired thickness.
Drizzle the glaze over the cooled cake. Slice and serve with ice-cold milk. Enjoy!
