Peel and dice the sweet potatoes then place on a large baking sheet. Drizzle with olive oil then season with sea salt, and freshly cracked pepper, to taste. Toss well to coat evenly.
Place in the oven to roast for 25 minutes, stirring halfway through bake time.
Meanwhile, make the maple brown butter by melting the butter over medium heat in a small saucepan, stirring often, until melted. It will start to bubble, foam, and separate then will turn golden brown with a nutty aroma. Side Note: Watch the butter carefully while cooking because it can burn quickly & easily.
Remove from the heat and pour into a small dish then immediately add the maple syrup and whisk until well combined; set aside until needed.
Once the sweet potatoes have roasted for 25 minutes, drizzle the maple brown butter over them then carefully toss to coat. Continue to roast for 1-2 minutes.
