Cook the bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Place the bacon on paper towels to drain the grease then cut into bits; set side until needed.
Pour the bacon grease into a small dish then wipe out the large skillet with a paper towel. Return the skillet along with 2 tablespoons of reserved bacon grease to the stove over medium-high heat.
Add the onion and cook, stirring often, for 2-3 minutes.
Add the cabbage, apple cider vinegar, sea salt, freshly cracked black pepper, and a pinch of brown sugar then cook, stirring often for 8-10 minutes, or until wilted.
Add the garlic and cook, stirring constantly for 1 minute. Taste and re-season with additional apple cider vinegar, sea salt, and/or freshly cracked black pepper, if needed.
Add the bacon bits and toss to combine then pour into a serving bowl and serve immediately. Enjoy.
