Zesty Cucumber Salad

  • 1 English cucumber peeled, quartered lengthwise, sliced
  • 2 tbsp sweet yellow onion diced
  • 3 tbsp seasoned rice vinegar
  • 1 tbsp ranch dry seasoning from packet
  • Freshly cracked black pepper taste


  • Peel, quarter lengthwise, and slice the cucumber.
  • Place the cucumber and diced onion in a large bowl then add the vinegar, ranch dressing dry seasoning, and black pepper, to taste.
  • Mix until well combined.
  • Cover and refrigerate for 1 hour prior to serving.
  • Refrigerate leftovers in a sealed container for a few days. Enjoy.
