Tomato and Feta Galette

  • 1 pre-made pie crust
  • Olive oil to taste
  • Sea salt and freshly cracked pepper to taste
  • 1 small shallot sliced thinly
  • 1 garlic clove cut into thin slivers
  • 1/2 cup feta cheese divided
  • Handful of cherry tomatoes halved
  • Fresh basil leaves


  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  • Roll the pre-made pie crust out on the parchment paper.
  • Brush the pie crust with olive oil then season with sea salt and freshly cracked pepper, to taste.
  • Sprinkle the shallot, sliced garlic, and most of the feta cheese in the center of the pie crust leaving about a 2 inch border.
  • Layer the cherry tomato halves over the cheese, shallot, and garlic.
  • Gently fold and pleat the dough over the tomatoes.
  • Brush the edges of the folded pie crust with a bit of olive oil, if desired.
  • Place into the oven and bake for 40-45 minutes, or until the crust is golden brown. Remove from the oven and sprinkle with the remaining feta cheese and top with fresh basil leaves.
  • Slice and serve immediately. Enjoy.
