Preheat the oven to 200 degrees. Line two baking sheets with parchment paper.
Using a mandoline, cut the apples very thinly. Remove any seeds from any of the slices.
Place the apples slices on the baking sheet, making sure not to overlap them.
Sprinkle the top with cinnamon, to taste.
Place into the oven to bake for 2 - 2½ hours, or until crisp.
Remove from the oven and allow to cool on a wire rack.
