Cinnamon Honey Butter Roasted Acorn Squash Rings

  • 1 acorn squash cut into rings, seeds and membranes discarded
  • 2 tbsp salted butter softened to room temperature
  • 3-4 tsp honey to taste (more or less depending on desired sweetness)
  • 1/4 tsp cinnamon
  • Pinch of salt


  • Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
  • Using a sharp chef's knife, cut the ends off the acorn squash then slice into rings.
  • Cut the seeds and membrane out of each ring.
  • Place onto the prepared baking sheet.
  • Combine the softened butter with the honey, cinnamon, and salt; mix until well combined and creamy.
  • Brush just a little bit of cinnamon honey butter on the bottom of the rings then return to the baking sheet.
  • Brush more of the cinnamon honey butter on the top and insides of the rings; reserving some of the honey butter for later use.
  • Place the squash into the oven and roast for 20-25 minutes, or until tender.
  • Remove from the oven.
  • Place the remaining honey butter into the microwave for a few seconds until melted.
  • Drizzle the melted honey butter over the squash rings.
  • Serve immediately. Enjoy.
