Queso Dip

  • 1 tbsp butter
  • 1 tbsp flour
  • 1/2 cup milk
  • 1/2 cup tomatoes seeded & diced
  • 1 can green chiles mild or spicy
  • 1 1/2 cups sharp cheddar cheese shredded
  • 1 1/2 cups Monterey Jack cheese shredded


  • Heat the butter in a large skillet over medium heat.
  • Add the flour and whisk for 1 minute.
  • Slowly add the milk while whisking continuously until smooth and creamy, about 3 minutes.
  • Add the diced tomatoes, green chiles, cheddar cheese, and jack cheese until the mixture is completely combined and smooth (except for the tomatoes & green chiles).
  • Side Note: Best when made right before serving.
