Preheat the oven to 225 degrees. Line two baking sheets with parchment paper.
Combine the sugar and cinnamon together; mix well.
Using a mandoline, cut the pears very thinly.
Remove any seeds from any of the slices. Place the pear slices on the baking sheet(s), making sure not to overlap them.
Sprinkle the top with the cinnamon-sugar mixture.
Place into the oven to bake for 2 1/2-3 hours, or until dried and crisp (they will get crisper when cooling).
Remove from the oven and allow to cool on a wire rack. Enjoy!
