Marinated Grape Tomatoes with Shallot and Garlic

  • 1 pint mixed grape tomatoes
  • 1 small shallot sliced thinly into rings
  • 1 small clove of garlic sliced thinly into slivers
  • 1/4 cup seasoned rice vinegar
  • 2 tbsp olive oil
  • Pinch of crushed red pepper flakes to taste
  • Sea salt and freshly cracked pepper to taste


  • Combine the sliced tomatoes, shallot rings, and garlic slivers into a serving bowl.
  • Add the seasoned rice vinegar, olive oil, and crushed red pepper flakes.
  • Season with sea salt and freshly cracked pepper, to taste.
  • Set aside for 30-60 minutes to allow flavors to mingle before serving. Enjoy.
