Marinated Tomatoes with Mozzarella

  • 4-5 to matoes sliced thickly
  • 1/4 cup olive oil
  • 2-3 tbsp balsamic vinegar to taste
  • 1 tbsp shallot finely diced
  • 1 tbsp fresh parsley finely diced
  • 1 tbsp fresh basil finely diced
  • 1 tbsp fresh oregano finely diced
  • 1/2 tsp honey more if desired
  • Sea salt and freshly cracked pepper to taste
  • Mozzarella cut into bits


  • Cut the tomatoes into thick slices and arrange in a single layer in a large shallow dish.
  • Combine the olive oil, balsamic vinegar, shallot, garlic, parsley, basil, oregano, and honey together in a bowl; whisk until well combined. Season with sea salt and freshly cracked pepper, to taste.
  • Pour the vinaigrette evenly over the tomato slices.
  • Cover with plastic wrap and set aside on the counter for 1-2 hours.
  • Serve with mozzarella bits on top and season with a bit more freshly cracked pepper, to taste. Enjoy.
