Ingredients
4-5 tomatoessliced thickly
¼cupolive oil
2-3tbspbalsamic vinegarto taste
1tbspshallotfinely diced
1tbspfresh parsleyfinely diced
1tbspfresh basilfinely diced
1tbspfresh oreganofinely diced
½tsphoneymore if desired
Sea salt and freshly cracked pepperto taste
Mozzarellacut into bits
Instructions
Cut the tomatoes into thick slices and arrange them in a single layer in a large shallow dish.
Combine the olive oil, balsamic vinegar, shallot, garlic, parsley, basil, oregano, and honey together in a bowl; whisk until well combined. Season with sea salt and freshly cracked pepper, to taste.
Pour the vinaigrette evenly over the tomato slices.
Cover with plastic wrap and set aside on the counter for 1-2 hours.
Serve with mozzarella bits on top and season with a bit more freshly cracked pepper, to taste. Enjoy.
