Heirloom Caprese Salad with Balsamic Reduction

  • 1/3 cup good balsamic vinegar
  • 2 large heirloom tomatoes sliced
  • 2 balls of mozzarella sliced
  • Fresh basil leaves
  • Good olive oil to taste
  • Sea salt and freshly cracked pepper to taste


  • Heat the balsamic vinegar in a small saucepan over medium heat.
  • Bring to a boil and reduce heat to low then cook until thickened and reduced by half, about 10 minutes.
  • Cool completely.
  • Slice the heirloom tomatoes and mozzarella cheese.
  • Layer tomatoes, cheese, and basil in a spiral on your serving plate.
  • Drizzle with good olive oil then season with sea salt and freshly cracked pepper, to taste.
  • Drizzle the cooled balsamic vinegar on top.
  • Serve immediately. Enjoy.
