Heirloom Caprese Salad with Balsamic Reduction

Ingredients
⅓
cup
good balsamic vinegar
2
large heirloom tomatoes
sliced
2
balls of mozzarella
sliced
Fresh basil leaves
Good olive oil
to taste
Sea salt and freshly cracked pepper
to taste
Instructions
Heat the balsamic vinegar in a small saucepan over medium heat.
Bring to a boil and reduce heat to low then cook until thickened and reduced by half, about 10 minutes.
Cool completely.
Slice the heirloom tomatoes and mozzarella cheese.
Layer tomatoes, cheese, and basil in a spiral on your serving plate.
Drizzle with good olive oil then season with sea salt and freshly cracked pepper, to taste.
Drizzle the cooled balsamic vinegar on top.
Serve immediately. Enjoy.
