Roasted Brussels Sprouts with Bacon and Halloumi

  • 4 slices of lean bacon
  • 1/3 cup Halloumi cheese diced into bite sized pieces
  • 2 cups brussels sprouts halved
  • 1 tbsp olive oil
  • 1 clove of garlic minced
  • Sea salt and freshly cracked pepper to taste


  • Preheat oven to 400 degrees. Coat a baking sheet with olive oil cooking spray.
  • Cook the bacon in a large skillet over med heat until just done (it will continue to cook in the oven), about 3-4 min.
  • Remove all but a teaspoon of the grease. Add the diced halloumi cheese and sauté for 2-3 minutes or just turning golden brown (it will continue to cook in the oven).
  • In a large bowl, toss the brussels sprouts with the olive oil, minced garlic, sea salt and freshly cracked pepper, to taste.
  • Add the bacon and halloumi cheese.
  • Spread the mixture on the prepared baking sheet, then place into the oven.
  • Bake for 15-20 min, tossing halfway through. Remove from oven and serve immediately. Enjoy!
