Preheat oven to 400 degrees. Coat a baking sheet with olive oil cooking spray.
Cook the bacon in a large skillet over med heat until just done (it will continue to cook in the oven), about 3-4 min.
Remove all but a teaspoon of the grease. Add the diced halloumi cheese and sauté for 2-3 minutes or just turning golden brown (it will continue to cook in the oven).
In a large bowl, toss the brussels sprouts with the olive oil, minced garlic, sea salt and freshly cracked pepper, to taste.
Add the bacon and halloumi cheese.
Spread the mixture on the prepared baking sheet, then place into the oven.
Bake for 15-20 min, tossing halfway through. Remove from oven and serve immediately. Enjoy!
